Jun 08, 2009· I have been reading about high extraction flour on this forum and I want to make Thom Leonard's country french, but I have a question. In the book "artisan baking" it tells of a way to make a kind of pseudo high extraction flour by sifting whole wheat, but in "the bread bible" RLB talks about reduced bran flour.
Oct 05, 2018· is flour that contains somewhere between and 72% the whole grain. Some of the bran and germ are sifted out by the miller. 72% extraction is considered straight flour and white patent flours are sifted further from that.
Flour extraction is the common process of refining Whole Grain Flour first milled from grain or grist by running it through sifting devices.
The “extraction rate” of a flour is a good indicator of its softness and whiteness, as it measures how much of the total wheat berry the flour contains. The higher the extraction rate, the more of the bran, germ and tougher outer layers of endosperm the flour has in it.

Clear flour (or low-grade flour) is composed of the flour streams between 65 and 72% extraction. Clear flour is usually dark because these fractions are quite high in bran. Clear flour is usually dark because these fractions are quite high in bran.
Further, as the extraction is lowered, the miller, in order to get his length (extraction), can reject pro- gressively more of the coloured stocks ; thus in milling an 80% flour only 77-0 parts of endosperm are required as against 79-7 parts in the milling of 85% flour.

High extraction flour is easy for you to make at home, you only need one piece of equipment: a flour sifter. This sifter is the flour sifter I use, but there are many out there. The process for making high extraction flour is easy, pour some of your whole wheat flour on top of the sifter and shake so the fine particles drop down through the mesh while some of the more coarse bran stays on top.
In general, as the extraction rate of the flour increases, so do both the protein and the ash content. However, as the extraction rate approaches (whole meal), the protein content drops slightly, while the ash content continues to rise.

Dec 27, 2014· In a response surface study on gluten extraction from low-grade flour and durum flour, it was found that the protein concentration in protein fraction increased as the water content in the dough increased from 400 to 710 g/Kg (Dik et al. 2002).
High extraction is a rating of how much flour you end up with after milling. So whole wheat flour contains the entire mass of wheat because the bran and endosperm are included in the milling. Ten lbs of wheat would yield ten lbs of flour.

extraction rate of 75%, 10,000 cwt of flour requires 22,222 bushels of wheat. If extraction is increased to 76%, the daily amount of wheat required falls to 21,930 bushels, a savings
flour, extraction rate The yield of flour obtained from wheat in the milling process. A extraction (or straight‐run) is wholemeal flour containing all of the grain; lower extraction rates are the whiter flours from which progressively more of the bran and germ (and thus B vitamins and iron) are excluded, down to a figure of 72% extraction, which is normal white flour.
